Raw Chocolate Vegan Brownies

This is one of my favourite healthy desserts – Raw Vegan Chocolate Brownies. Delicious and they only take 10 mins to make too.

Ingredients

For Brownies

  • 1 cup pecans
  • 1 cup dates
  • 5 tablespoons cacao
  • 4 tablespoons shredded unsweetened coconut
  • 2 tablespoons coconut nectar
  • 1/4 teaspoon Celtic sea salt

For Icing

  • 1 cup dates
  • 1/4 cup cacao
  • 1/4 cup coconut oil
  • 3/4 cup water

Directions

  •  Place pecans in a food processor and process until the pecans become crumbly.
  • Add dates and process again – the mixture should stick together when the dates are well processed.
  • Add the rest of the ingredients and process again. Don’t over process.
  • Put the mixture into a dish or small cake tin and press down firmly.Place all ingredients in a high-speed blender. If possible, let them sit in there for a few minutes to soften the dates a little bit.

Now for the icing!

  • Blend all ingredients. Start at a slow speed then increase.
  • Keep blending until the desired consistency.
  • Add to brownies and set in the fridge or eat straight away!
