One of my favourite dishes. This is a great way to have a curry you know is completely healthy and as its Raw all the nutrients are preserved. You can also make some Parsnip Rice to go with it..
Ingredients
Curry Sauce:
4 Sun-dried tomatoes, soaked in water for about 30 mins
4 Fresh Tomatoes
1 clove Garlic
2 tsp Garam masala
1 tsp Ground cumin
1 inch of Fresh ginger
4 Dates
Pinch Salt
1 tbs Lemon Juice
1 litre Water
Veg:
2 Carrots
1 small white cabbage
3 red peppers
Method
First blend the water, fresh tomatoes, sun dried tomatoes and dates then add the seasoning,
Keep tasting and adjusting to flavour to your taste.
Dice all the vegetable and add the sauce.
Gently warm and serve.
